Tessa's Cookie Come True

RECIPE
1 cup unsalted butter, cut into cubes
1 cup granulated sugar
1 cup light brown sugar, packed
2 and a half teaspoons organic vanilla extract
2 large eggs
3 cups all-purpose flour, unbleached
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon pure, fine sea salt
2 1/4 cups Callebaut 54.4% dark callets (or your favourite kind of chocolate chips!)

Instructions
- Preheat your oven to 375 degrees Fahrenheit. Line three baking sheets with parchment paper and set aside.
- In a medium bowl, mix flour, baking soda, baking powder and sea salt with a whisk. Set aside.
- Crack two eggs into a separate bowl. Add vanilla. Set aside.
- Using the paddle attachment of a stand mixer, cream together butter and both sugars until combined.
- Beat in both eggs and vanilla until light. About 1 minute or so on medium speed.
- Mix in the dry ingredients just until combined.
- Add chocolate chips and mix well.
- With a small kitchen scale, using your hands, portion off 2 oz-3 oz (depending on how large you like your cookies) of dough. Slightly form the dough without forming it onto a firm ball. This will create thicker cookies!
- Chill portioned dough in the fridge for a couple hours or until firm.
- Remove portioned dough from fridge and place them evenly spaced on your prepared cookie sheets.
- Bake in preheated oven for approximately 8-10 minutes. Pull them from the oven just as they are starting to brown. (Timing can vary depending on size of cookies/ your oven)
- Allow cookies to sit on the baking sheet for 5 minutes before removing to cooling rack.
